Crunchy chickpeas baked to perfection with three tasty seasoning alternatives for snacks or toppings.

# What You'll Need:

→ Base

01 - 2 cans (15 oz each) chickpeas, drained and rinsed
02 - 2 tablespoons olive oil

→ Classic Sea Salt

03 - 1/2 teaspoon fine sea salt

→ Smoky Paprika

04 - 1/2 teaspoon smoked paprika
05 - 1/4 teaspoon ground cumin
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon sea salt

→ Spicy Chili Lime

08 - 1/2 teaspoon chili powder
09 - Zest of 1 lime
10 - 1/4 teaspoon cayenne pepper, optional
11 - 1/4 teaspoon sea salt

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat chickpeas thoroughly dry with a clean kitchen towel to ensure maximum crispiness during baking.
03 - Spread dried chickpeas on the prepared baking sheet and toss with olive oil, ensuring even coating.
04 - Bake for 25 to 30 minutes, shaking the pan halfway through, until chickpeas are golden and crispy.
05 - Remove from oven. While still warm, toss chickpeas with your chosen flavor variation: Classic Sea Salt with salt only, Smoky Paprika with combined spices, or Spicy Chili Lime with chili powder, lime zest, cayenne, and salt.
06 - Return seasoned chickpeas to the oven for an additional 5 minutes if extra crunch is desired.
07 - Allow chickpeas to cool completely before transferring to an airtight container for storage.

# Expert Tips:

01 -
  • They're genuinely crispy and addictive, nothing like the mushy chickpeas in cans that most people assume they're stuck with.
  • Three completely different flavor options mean you'll actually make this more than once instead of forgetting about it.
  • Takes barely any hands-on time and your oven does all the heavy lifting while you do literally anything else.
02 -
  • Drying the chickpeas is genuinely the difference between success and disappointment, so don't skip that towel step even if it feels tedious.
  • Season them while they're still warm from the oven because the heat helps the spices cling to each chickpea instead of just settling on the bottom of the container.
03 -
  • If you want to experiment beyond the three seasonings, curry powder, ranch seasoning, or lemon pepper all work beautifully and create totally different vibes.
  • Don't skip the parchment paper because it genuinely makes cleanup feel effortless and you'll actually want to make these again.
