02 - 1 cup shredded carrots
03 - 1 cup shredded green cabbage
04 - 1/2 cup thinly sliced scallions, divided
05 - 1 red bell pepper, thinly sliced
06 - 1 clove garlic, minced
07 - 1 tbsp fresh ginger, minced

→ Sauce

08 - 3 tbsp low-sodium soy sauce
09 - 1 tbsp rice vinegar
10 - 1 tbsp sesame oil
11 - 1 tsp honey
12 - 1/2 tsp chili flakes, optional

→ Assembly

13 - 1 head butter lettuce or romaine, leaves separated and washed
14 - 1 tbsp toasted sesame seeds

# Directions:

01 - In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and chili flakes. Set aside.
02 - Heat a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, approximately 5 to 6 minutes. Drain excess liquid if necessary.
03 - Add minced garlic, minced ginger, and half of the scallions to the cooked turkey. Cook for 1 minute until fragrant.
04 - Stir in shredded carrots, shredded cabbage, and sliced bell pepper. Cook for 3 to 4 minutes until vegetables reach crisp-tender consistency.
05 - Pour prepared sauce over the mixture and toss well to coat all ingredients evenly. Cook for 1 additional minute, then remove from heat.
06 - Spoon turkey stir-fry mixture into prepared lettuce leaves. Garnish with remaining scallions and toasted sesame seeds. Serve immediately.

# Expert Tips:

01 -
  • It comes together faster than ordering takeout, yet tastes like you've been cooking all afternoon.
  • The lettuce cups stay cool and crisp while the filling is warm and deeply flavored, creating this wonderful textural contrast that never gets boring.
  • You can prep everything ahead and let guests assemble their own wraps, which always makes people feel more invested in what they're eating.
02 -
  • Don't skip draining the turkey liquid—too much moisture in the pan will make your filling soggy and dilute the sauce.
  • Keep your lettuce leaves whole and chill them before serving; they hold up better and feel more satisfying to wrap around the filling than torn pieces ever would.
03 -
  • Chill your lettuce leaves in ice water for ten minutes before serving—they'll stay crisp longer and feel more refreshing against the warm filling.
  • Make your sauce slightly more concentrated than you think you need, because the vegetables release moisture as they cook and will naturally dilute it.
